At the peak of its drinking age the 1990 Dom Perignon is simply stunning, smooth and crisp on the palate with hints of pear, apple, citrus, strawberries, fine bubbles that only come with a correctly aged Champagne. In my top 3 favourite DP’s together with the 1996 and 2002. Enjoyed this together with Foie gras and fig jam, Spanish Bellota Jamon & Queso Currado. For dessert strawberries and wild berries mixed with natural yogurt was wonderful.
