On the nose, the first hints of dried herbs rapidly give way to candied grapefruit and cinnamon. This is rounded off with notes of biscuit and raisin.
In the mouth, the sensations follow one after another closely, with rhythm, precision and intensity.
Finish, the initial density evolves into a creamy amplitude. Its finesse draws out and takes off on a sappy note.
Dosage: 5.5 g/L
Green-tinged gold. Deep, smoky, exotic bouquet of poached pear, yellow plum, nectarine, lees and cured meat. Lush and creamy, with intensely smoky orchard fruit flavors and a sweet/spicy cinnamon toast quality. Deep, chewy and expansive on the finish, where the cinnamon and toasty lees flavors echo with noteworthy persistence. Complex enough to enjoy now but has the depth and balance to repay aging.

Much like the Rose Oenotheque this Blanc version is also still quite young and vibrant making it ideal to drink now or enjoy in the next 5/10 years. Wonderful work by the Dom Perignon team and Richard Geoffroy. Beautifully smooth and intense taste of spice and cinnamon with a further toasty and dried nuts smell. Perfect to match with Tuna Sashimi and Tempura Maki prawns. For dessert Dark Chocolate Mousse was chosen.
