Dom Perignon 1996 Oenotheque 75 cl

Richard Geoffroy, Chef de Cave, speaks of three ages of peak maturity in Dom Pérignon’s life; the first after 7-8 years (the standard release – currently the 2006 vintage), the second at 12-20 years and a third at 35-40 years. Dom Pérignon makes these mature vintages available through extremely limited ‘Oenothèque’ releases, representing just 1-2% of only the most age-worthy vintages. Oenothèques are an attestation to the battery life of energy and youth contained within the lees in a bottle of champagne, capable of sustaining a bottle for a lifetime.

Pale with an immediately apparent complexity on the bouquet. Dense, yet wonderfully racy, this shows amazing freshness and depth of fruit. Full body, without the high-acid profile of the vintage, the flavours evoke citrus and smoke. The Oenothèque 1996, enjoying what Richard Geoffroy describes as its ‘second plénitude’ of development, is now taking on a biscuity, honied richness, with hints of tropic fruit, figs and hazelnut adding suitable complexity.

The 1996 Harvest

The 1996 year was full of contrasts and the summer changeable, but remains famous as a high sugar, high acid champagne vintage. In the month before grape-picking, the spells of hot weather and the influence of north-easterly winds contributed to the initial maturity of the vintage. Initially lauded as the best since 1990, maybe better, it is undergoing a slight re-appraisal at the moment, as with some of the white Burgundies. High acidity and a tendency to oxidise appear peculiar bed-fellows, but the phenomenon has been noted with one or two champagnes.

Description

On the nose, praline rapidly combines with citron and dried figs. Darker underlying iodine and peaty notes also emerge.

In the mouth, there is an apparent paradox, with concentration and movement vying for ascendancy. The structure of the wine is tense and assertive. Its energy, almost tactile, is contained for a moment before vibrating and exploding. Its opulence then becomes superbly persistent, trenchant and persuasive.

The 1996 Dom Pérignon Œenothèque offers up layers of pastry, lemon, smoke and toastiness. At first deceptively understated, the wine turns positively explosive and layered on the palate, showing remarkable tension, elegance and power, all wrapped around a seriously intense frame. The balance between fruit and acidity is awesome. This is a marvelous DP Œeno. The Œeno is the same juice as the regular Dom Pérignon, except the Œeno is aged on the cork while the regular DP is aged in crown-sealed bottles. Once disgorged, the Œenos get a slightly lower dosage than is typical for the original release DP. This bottle was disgorged in 2008.

As you can probably gather I am a huge fan of the 1996 Vintages and having tried all 4 variations the Oenotheque is really something special!

Extremely tight to start with as it opens and lets out a wonderful citrus taste of dried fruit and pear, as well as cinnamon also are tasted as the Champagne begins to show itself best after around 30 minutes.

Further aromas of chocolate and dried fruits appear as slight notes of citrus and pear appear and fade out.

Paired extremely pleasantly with Tuna tartar with Rio Frio Russian Style caviar, followed for main course by a Lobster Risotto. As for dessert Strawberry and Costa Rican pineapple with a slight topping of Vanilla Ice cream was perfect.
