P2 – The Second Plénitude:

Dom Pérignon vintages are released after 7 years of ageing. A small portion of each vintage is kept on the lees even longer, to continue the evolution and magnify its natural qualities.

Only one person – the Dom Pérignon cellar master – can decide if and when to re-release a vintage. The P2 label indicates that the vintage has reached its second peak in maturity, with optimized intensity (15 to 20 years after harvest). The P3 label indicates its third peak, with optimized complexity (after 30 years on the lees).

The maturation of Dom Pérignon occurs not in a simple linear trajectory, but in successive leaps into new expression, each of which are called Plénitudes. In the long journey of elaboration, the wine goes through this metamorphosis, a transformation. Each Plénitude contributes to Dom Pérignon’s singularity. In the darkness of the cellars, from one plénitude to the next, Dom Pérignon will grow and blossom, transmuting time into energy.

Weather: The 1995 harvest was a large crop and shared similar characteristics with the renowned 1998. Following four consecutive years of tough growing conditions, 1995 came as a huge relief to the region – the first universally declared vintage since 1990. The summer was mainly hot, with some showers a few weeks before the harvest. As a first release back in 2002, Dom Pérignon 1995 (P1) had such great depth and balance with incredibly ripe fruits. Now, over twenty years since bottling, the second release 1995 P2 has flavours of incredibly complex, rich and concentrated fruits.

Description

On the nose, a fresh bouquet of fruits combines with hints of rye, praline and smoke. On the palate hints of toasted brioche, smooth and very balanced, this champagne has abundance of apple and hints of spice.

The finish is incredibly long and full of vibrancy.

The 1995 Dom Pérignon P2 is an under the radar gem from Dom Pérignon. Wonderfully open-knit, deep and expressive, the 1995 captivates all the senses with its heady, arrestingly beautiful personality. Chamomile, dried pear, orchard fruit and dried flowers all open up, but it is the wine’s total balance and harmony that stand out most. The 1995 has enough energy and vibrancy to drink well for many years to come. Simply put, the 1995 is a fabulous wine. I absolutely loved it.

Tasted during my visit in November to Champagne and a once in a lifetime 24 hours at Dom Perignon.

Having the privilege to taste together with Mr Vincent Chaperon the Dom Perignon P2 1995 was simply spectacular!

Often overshadowed by its older brother the 1996, the 1995 simply hits you from the start with a energetic and beautiful perfectly balanced bubble while enchanting you with notes of
Green apple, pear, roses, and praline. On the palate roasted nuts, brioche, and beautiful citric fruits.
