P2 – The Second Plénitude:

Dom Pérignon vintages are released after 7 years of ageing. A small portion of each vintage is kept on the lees even longer, to continue the evolution and magnify its natural qualities.

Only one person – the Dom Pérignon cellar master – can decide if and when to re-release a vintage. The P2 label indicates that the vintage has reached its second peak in maturity, with optimized intensity (15 to 20 years after harvest). The P3 label indicates its third peak, with optimized complexity (after 30 years on the lees).

The maturation of Dom Pérignon occurs not in a simple linear trajectory, but in successive leaps into new expression, each of which are called Plénitudes. In the long journey of elaboration, the wine goes through this metamorphosis, a transformation. Each Plénitude contributes to Dom Pérignon’s singularity. In the darkness of the cellars, from one plénitude to the next, Dom Pérignon will grow and blossom, transmuting time into energy.

The harvest

The year was full of contrasts and the summer changeable, with the wetter periods never quite making up for the earlier hydric deficit.

Eventually, in the month before grape-picking (16 September), it was as much the spells of hot weather as the influence of north-easterly winds that led to the original maturity of the vintage

Description

To the eye, praline rapidly combines with citron and dried figs. Darker underlying iodine and peaty notes also emerge.

On the nose, there is an apparent paradox, with concentration and movement vying for ascendancy. The structure of the wine is tense and assertive. Its energy, almost tactile, is contained for a moment before vibrating and exploding. Its opulence then becomes superbly persistent, trenchant and persuasive.

The famous 1996 Vintage by Dom Perignon is still fresh, smooth, and flowing with pearl like bubbles in this beautiful P2 bottling.

Entering its ideal drinking window now I feel that the 1996 P2 is slightly fresher in comparisson to my last tastings of the regular 96 and Oenotheque 96 versions.

Mesmerizing aromas of chocolate and candy/dried fruits appear as citrus, pear, and liquorish captivate the palate.

Food pairing of Scallops covered in Iberico Ham for starters, Sea-Bream and Mixed vegetables for main course, followed by French Cheese plater for dessert.
